The Environmental Health Unit administers a ten-hour food worker certification course covering aspects of proper food safety principles, prevention of foodborne illness, and review of restaurant inspection. This is required for all new food service establishments in Schenectady County. One person from each establishment must attend the course and receive certification.

Trained nutrition staff from Cornell Cooperative Extension provide a series of nutrition lessons intended to address the challenges faced by low income families. Sessions are typically scheduled once per week for 6-8 weeks at a variety of locations across the county and are provided free of charge to low-income families and youth. Sessions involve a variety of interactive, hands-on activities, food preparation and tasting, and discussions to address the concerns of families. Topics addressed in these sessions are adapted to meet the needs of the individuals in the group. Some examples of the topics discussed at these sessions include: - How to make the most of limited food dollars - Hands-on food preparation of healthy snacks and meals - Recipe modification - The importance of physical activity in a healthy lifestyle - Ideas for increasing fruits and vegetables in meals and snacks - Food safety
The Cornell Cooperative Extension links the research from Cornell University and applies it to maximize New York State's agricultural and natural resources. It also provides programming, services, and information regarding sustainability, nutrition, food safety, obesity prevention, and youth development/education (through the 4-H program). Responsible for implementing programs and providing information to help individuals live healthier lives by minimizing environmental health threats. Some efforts are targeted to the population at large, such as monitoring of public and private drinking water supplies, food safety in restaurants, fire safety in hotels, and permitting of mass gatherings. Other programs target specific needs such as interventions to prevent illness from rabies, lead poisoning, failing septic systems, and sale of tobacco products to minors.
